This is gonna be our first blog post…. (yeeeiy) We just adopted a baby “Scoby” from the R&D (I+D+I in spanish) from our university and we are going to experiment with some teas and juices to create a refreshing drink for this summer. This is the first time that we report and we will keep you updated with the process and the results.
But first of all…. What the hell is Kombucha and what is it made of???
Kombucha is an ancient fermented beverage made out of black tea with help of a Scoby (Scoby stands for Symbiotic Colony of Bacteria and Yeast that ferment the sugars and other substances into vinegar, lactic acid and other byproducts).
